Changeover #1

Anagrams are words in which the letters of one word are shuffled around to make a new word, like ANIMAL and MANILA. Find the anagrams to all the listed words, then read down the first letter of each new word to find two things that are always changing. Write the answers below each list. Note: Each new word will start with a different letter than the original word.

Is it possible that #9 is a typo?

I hope that instead of

9. POP-----------O-----------CITY

it is supposed to say

9. PEP-----------O-----------CITY

If so, DO NOT click on the spoiler unless you want to see the answer:

Spoiler: show
1. CAPACITY (CAP - A - CITY)

2. CARAMEL (CAR - AM - EL)

3. CHARITABLE (CHAR - IT - ABLE)
