Question: Neutral Races

When a player surrenders, do his filled regions retain whatever race bonus he has before or do they turn to Elves like the spectators see?
I asking because I'm a noob and still don't know this stuff after 3500+ games.

They retain, have a go with natives and see

They definitely retain the race of the previous player.
I use Undead most of the time. I am used to boosting on every attack whether it is needed or not. I sometimes forget to not do this when hitting snowflakes. I recently hit a series of abandoned white spaces held by snowflakes and paid the price.
